I noticed you mentioned the Pro Series 100 not being as thick as your older machine. I did want to point out that the thickness of each Pro Series machine depends on the size of the capsule it's rated for! The size 000 capsule machine is the thickest (and it is THICK), while the thinnest will of course be the size 5 version. This due to the height of the capsules being different, and so each machine will have a different 'max press' length to ensure that size is closed completely upon pressing.
To answer your question about adjusting the heights of the capsules, there are two ways to adjust them on the Pro Series machines:
1. Slightly loosen each of the body plates star-shaped hand-twistable plate stops until the top plate is in the position you want (you can tell its correct because each capsule body will be just below the surface of the plate, ensuring that your powder spreader does not scrape when you spread past them). If the amount of adjustment you need is more than the top star bolts can allow, then you'll want to move on to the permanent adjustment solution below.
2. If it's more than just a slight adjustment, what you'll want to do is fully tighten all the star bolts on top of the body plate by hand. Then, we're going to go one by one and adjust each foot assembly until the entire top plate is perfectly raised or lowered according to your capsule bodies. To start, remove all the metal/rubber feet on the machine. Then pick any spring/foot assembly and put a capsule body in hole nearest to it. Loosen the bolt on the bottom of the leg with your 8mm wrench. This will allow the leg assembly to be twisted. Twist the entire screw clockwise to lower the plate, or counter clockwise to raise the plate. After twisting in the direction you need, let go and check the capsule body to see if the top plate is just above the top of the open side of the capsule. If not, continue adjusting until it is. Once it's in the correct position, take your 8mm wrench and tighten the bolt on the bottom of the leg. Then do the same thing for every leg on your machine. There are 4 for the pro 100, 6 for the pro 400, and 12 for the pro 800! Note for those with The BEAST™: be careful when re-tighening the bolts on the 800 hole machine that rest against the acrylic! Overtightening these can cause the acrylic to crack if you're not careful!
